Basic cupcakes

Ingredients

  • 115g stork or butter
  • 115g caster sugar
  • 2 large eggs
  • 140g self raising flour
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla essence

Icing

  • 85g stork or butter
  • 225 icing sugar
  • 1/2 tsp vanilla essence
  • 2 tbsp milk

Method

  • Beat all the ingredients with a wooden spoon in a bowl.
  • Preheat the oven to 170 degrees.
  • Divide between 12 cupcake paper cases.
  • Bake for 15-20 minutes.
  • Cool on a wire tray.
  • For the icing, beat all ingredients together.
  • Once the mixture is light and creamy, add the food colouring you want.
